Fruity Nut and Honey Energy Bites
Ingredients
- 1 cup dried cherries
- 1 tsp vanilla extract
- 2 cups Honey Nut Cheerios
- ⅓ cup pumpkin seed kernels
- ½ cup almond butter
- 1 tsp honey
Directions
- Soak dried cherries in hot water for 10 minutes, then drain
- Put cherries and vanilla into food processor; pulse until paste forms
- Add 1½ cups Honey Nut Cheerios and pulse until crushed and mixed in
- Combine cherry mixture, pumpkin seeds, almond butter, and remaining Cheerios into bowl and mix well
- Form into balls and store in airtight container in fridge
Cinnamon Apple Chips
Ingredients
- 4 apples cored and sliced 1/8-inch thick
- ½ tsp ground cinnamon
- ½ tsp granulated sugar, if needed
Directions
- Slice apples and coat with cinnamon and sugar
- Spray baking sheet and line apples flat on pan
- Bake for 2-3 hours at 200 degrees until dry and soft
Cheese Crackers
Ingredients
- 2 cups shredded cheddar cheese
- 4 tbsp unsalted butter, at room temperature
- 1 cup flour
- 2-3 tbsp milk
- Coarse salt for topping
Instructions
- Put cheese, butter, and flour into food processor and pulse into crumbs
- Slowly add milk until doughy
- Divide dough in half and shape into round discs
- Wrap in plastic wrap and place in fridge for 30 minutes
- Roll out one disc of dough on a lightly floured surface
- Cut into squares
- Sprinkle with salt
- Bake for 10-15 minutes
Strawberry Kiwi Gummies
Ingredients
- 2 cups strawberries, frozen, unsweetened
- 2 medium kiwis
- 6 tbsp sugar
- 2 packages (1 oz) gelatin, dry powder, unsweetened
Directions
- Peel and slice kiwis, allow strawberries to thaw
- Put kiwis and strawberries into bowl with 6 tbsp sugar
- Mash fruit with fork, then strain through cheesecloth; keep juice
- Add juice and remaining sugar to small saucepan; slowly whisk in gelatin
- Heat mixture over medium-low for 2-3 minutes, whisking until gelatin and sugar dissolve
- Pour mixture into candy molds or 8-inch square baking pan
- Chill until completely gelled (about 1 hour)
Baked Sweet Potato Chips
Ingredients
- 2 sweet potatoes
- 2 tbsp olive oil
- Salt to taste
Directions
- Rinse and dry sweet potatoes and cut them as thinly as possible
- Toss slices in olive oil
- Bake for 2 hours at 250 degrees—flip halfway through
- Salt and let rest for about 10 minutes
